Traditional Emirati Khameer Flatbread Recipe

Ingredients (4 breads):

  • 2 cups Bread flour/ APF 
  • ½ TBSP Instant Yeast
  • 3 TBSP Sugar 
  • ½ tsp Salt 
  • ½ TBSP Baking Powder
  • ½ - ¾ cup warm milk 
  • 2 tbsps Olive oil
  • 1/2 tsp Cardamom powder 
  • Saffron threads 
  • Sesame seeds
  • Nigella seeds/black sesame seeds
  • Ghee, for brushing
  • Honey, for brushing

    

Directions:

  1. In a bowl, add m flour, Instant yeast, sugar, salt, baking powder & cardamom powder and whisk to incorporate.
  2. Add the oil to the flour and mix then slowly add the milk and make a dough. Add just enough milk to make a soft & slightly sticky dough.
  3. Oil your station and knead your dough for 4-5mins.
  4. Place the dough in a greased bowl & cover with a damp towel and let it rise until doubled in size. It takes about an hour to an hour and a half.
  5. Preheat oven to the highest.
  6. In a bowl; heat milk milk nd add the saffron to it. -Mix well and keep it aside
  7. Divide the dough into 4 equal parts then shape them into a ball.
  8. Let the balls rest covered for 10 mins.
  9. Flatten into disks but not thin.
  10. Place flattened disks on a cooking rack then brush with milk & saffron.
  11. Generously sprinkle with seeds.
  12. Bake for 3-4 mins or until baked golden; watch for the sides as they tend to burn quick & enjoy the fragrant aroma spreading in your household. 
  13. Once out, I like to brush them with ghee and just a bit of honey as it pops up the taste.
  14. Let it cool down & cover to avoid it from drying out.
  15. Serve with date molasses/syrup, honey, ashta or cheese.
