Traditional Emirati Khameer Flatbread Recipe

Ingredients (4 breads):
- 2 cups Bread flour/ APF
- ½ TBSP Instant Yeast
- 3 TBSP Sugar
- ½ tsp Salt
- ½ TBSP Baking Powder
- ½ - ¾ cup warm milk
- 2 tbsps Olive oil
- 1/2 tsp Cardamom powder
- Saffron threads
- Sesame seeds
- Nigella seeds/black sesame seeds
- Ghee, for brushing
- Honey, for brushing

Directions:
- In a bowl, add m flour, Instant yeast, sugar, salt, baking powder & cardamom powder and whisk to incorporate.
- Add the oil to the flour and mix then slowly add the milk and make a dough. Add just enough milk to make a soft & slightly sticky dough.
- Oil your station and knead your dough for 4-5mins.
- Place the dough in a greased bowl & cover with a damp towel and let it rise until doubled in size. It takes about an hour to an hour and a half.
- Preheat oven to the highest.
- In a bowl; heat milk milk nd add the saffron to it. -Mix well and keep it aside
- Divide the dough into 4 equal parts then shape them into a ball.
- Let the balls rest covered for 10 mins.
- Flatten into disks but not thin.
- Place flattened disks on a cooking rack then brush with milk & saffron.
- Generously sprinkle with seeds.
- Bake for 3-4 mins or until baked golden; watch for the sides as they tend to burn quick & enjoy the fragrant aroma spreading in your household.
- Once out, I like to brush them with ghee and just a bit of honey as it pops up the taste.
- Let it cool down & cover to avoid it from drying out.
- Serve with date molasses/syrup, honey, ashta or cheese.
