This will be best when tomatoes are in season. Look for the darkest red tomatoes, preferably still on the vine.
If you can’t find great tomatoes you can make this with 1 14-ounce can of diced tomatoes. Just increase the broth to 1 cup.
Topping soups with fresh herbs is a great way to add flavor. You can use other herbs such as tarragon or parsley.
When storing soup, it is imperative that you cool the soup completely before you cover the soup. If the soup is still warm, the steam will rise to the top of the lid and drip back into the soup which will cause it to have a sour taste.
This soup can be made up to 5 days in advance and stored in the refrigerator.
This soup freezes beautifully for up to 3 months. Remember that food expands when it freezes, so leave a little bit of room at the top of the container.
